make it easier to pick preferred experimental modalities for structure data

The structure chooser doesn't make it easy to exclude or include classes of experimental structure, even more so when 3D-Beacons is used.

Ideally we should be able to say 'give me x-ray structures or the best alphafold models for this alignment', or 'prefer nmr over em', etc..
