Improve text colour contrast over pale coloured features

Jalview draws residue text in White when on top of a feature colour. This is hard to read for pale colours (e.g. any yellow in the simple colour chooser), and vanishes for white (e.g. if used for one end of a graduated colour range). Switching to black text for pale background could improve readability.
