Allow view-based colouring of structures (not just 'by sequence')

Currently structures can be coloured 'by sequence' (duplicating the colour scheme on the associated alignment view), or by a 'simple' colour scheme (e.g. Taylor) that has a fixed colour per residue.
Extend this to allow a choice of colour scheme that depends on other factors, but is not the one applied to the alignment.
