update applet and application jar signing procedures in line with Java 1.7 & 1.8 best practices

Java security alerts are a serious turnoff to many. A basic signature procedure needs to be introduced for the applet and jar building of applet and application needs to be updated for the latest recommendations (indexes, signature, manifest entries).
