Noticed by Hari Jayam (http://www.jalview.org/pipermail/jalview-discuss/2012-January/000750.html).
Once slab mode is enabled, by executing 'slab on' in the Jmol console, it should be possible to press CTRL+SHIFT and click-drag in the Jmol window to move the clipping plane forward and back. This isn't working in v2.7, probably due to the mouse event not propagating from the pane embedding the Jmol view.
